Key System Features:
High-Throughput 4-Vessel Brewhouse: The system featured a dedicated Mash Tun, Lauter Tun, Kettle, and Whirlpool. This configuration allows for overlapping brewing processes (e.g., mashing a new batch while the previous one is boiling), significantly reducing the time between brews and maximizing daily production capacity.
Advanced Siemens PLC Control System: The heart of the brewery was a powerful Siemens PLC system, operated via a large, intuitive color touchscreen HMI. This system provided:
Automated Step-Mashing: Precise, recipe-driven control over temperature and time for perfect mash profiles.
Automated Pump & Valve Control: Streamlined liquid transfers throughout the brewing process.
Recipe Management: The ability to save, load, and modify dozens of recipes, ensuring batch-to-batch perfection.
Premium Materials and Finish: The entire system was constructed with certified SUS304 and SUS316L stainless steel. All interior surfaces were polished to a sanitary finish of Ra < 0.4µm, and all welds were perfectly executed and passivated to eliminate any potential for contamination.
Efficient Cellar Management: The project included a range of 2000L and 4000L (double-batch) fermentation tanks, allowing for both standard and high-volume production runs. Each fermenter was equipped with its own temperature controller integrated into the central system.

Remote & On-Site Commissioning: CASSMAN provided highly detailed installation guides and remote support to the local technical team. A CASSMAN automation engineer then traveled to Seoul for the final commissioning, system testing, and to provide in-depth training to the Korean brewers on using the PLC system to its full potential.
