Large Brewery Fermenter
CASSMAN
Our large-scale fermenters are designed from the ground up to meet the demands of high-volume production. Every structural element is optimized for performance.
Cylindroconical Design: The industry-standard vertical cylindroconical shape with a 60-90° cone bottom is not just for volume. It is critical for efficient yeast flocculation, harvesting, and reuse, significantly reducing yeast costs and ensuring batch consistency.
Optimized Height-to-Diameter Ratio (2.5-4:1): We engineer the H/D ratio based on your specific process (ale vs. lager) to create the ideal hydrodynamic conditions for homogenous fermentation, preventing thermal stratification and ensuring uniform flavor development.
Robust Structural Integrity: With operating pressures of 0.1-0.3 MPa and total weights of dozens of tons, safety is paramount. Our tanks feature multi-layer reinforcement rings and heavy-duty seismic-rated leg or skirt supports, ensuring absolute stability and durability.
In large-scale brewing, repeatability is everything. Our fermenters are equipped with a suite of integrated systems to eliminate process variables and human error.
Precision Temperature Control: Multi-zone dimple jackets (typically three independent zones for the cone and body) allow for precise temperature profiling throughout the fermentation cycle. This ensures rapid and efficient cooling/heating, from initial yeast activation to final maturation, preventing off-flavors.
Fully Automated CIP System: Achieve rapid, repeatable, and validatable cleaning without manual entry. Our integrated CIP systems feature 360° high-pressure rotating spray balls and dedicated nozzles for all ports, managed by an automated sequence (rinse → caustic → rinse → acid → final rinse) to guarantee microbiological stability and minimize tank downtime.
Advanced Automation & Process Control: Each fermenter is a smart device. We integrate a full sensor package—including multi-level temperature probes (±0.1°C), pressure transmitters (±0.005 MPa), and optional density/level sensors—all feeding into your central SCADA system for real-time monitoring, automated adjustments, and complete batch data logging for traceability and process optimization.
The quality of your beer depends on the microbiological purity of your fermenter. We build our tanks to the highest food-grade standards.
Premium 304/316L Stainless Steel: We select the appropriate material for your needs—304 for standard lagers and ales, or corrosion-resistant 316L for high-acidity, high-alcohol, or specialty ingredient beers.
Sanitary-Grade Internal Finish: All internal surfaces are polished to a mirror finish (Ra≤0.8μm) to eliminate microscopic attachment points for bacteria and biofilms. All welds are ground smooth and passivated to ensure a completely inert, easy-to-clean surface.
Hygienic by Design: Every component, from the shadowless manway to the clamp-style fittings and sterile air filtration on the vent, is designed to prevent contamination and comply with global food safety standards like FDA and EU 10/2011.
