Lauter tun
CASSMAN
In the brewhouse, no single piece of equipment has a greater impact on wort quality and brewhouse efficiency than the lauter tun. It is where art and science converge. Our lauter tun is a masterclass in process engineering, meticulously designed to leverage the natural filtering properties of the grain bed itself. The result is brilliantly clear wort, maximum sugar extraction, and a streamlined, efficient brewing process.
The core function of a lauter tun is to use the grain bed as a natural filter. Our design is optimized to perfect this process.
Optimized Vessel Geometry: The cylindrical vessel features a gently sloped bottom, ensuring a uniform, evenly compacted grain bed. This design eliminates dead spots and prevents "channeling," where wort bypasses the filter bed, ensuring consistent filtration across the entire surface area.
High-Precision V-Wire False Bottom: The foundation of the system is the laser-cut, V-wire false bottom. The unique V-shape of the 0.5-1mm slots provides a large open surface area for maximum flow while actively preventing grain particles from clogging the screen. This non-clogging performance is critical for maintaining a consistent lauter.
Automated Rake & Plowing System: A motorized, multi-level rake system, controlled by a Variable Frequency Drive (VFD), gives the brewer ultimate control.
Bed Leveling: Initially, it evenly distributes the mash to create a filter bed of the ideal depth (typically 30-50 cm).
Bed Conditioning: If the filtration rate slows due to compaction, the rakes can be activated at a low speed to gently "cut" and loosen the bed, restoring flow without disturbing the established layers.
We harness the power of the grain itself to achieve superior clarity without external filter media.
Natural Filter Bed Formation (Vorlauf): During the initial 10-15 minute recirculation (vorlauf), the grain husks and particles settle onto the false bottom, forming a dense, natural filter bed.
Deep-Layer Filtration: This grain bed becomes a highly effective, deep-layer filter. Its intricate matrix of pores (approx. 10-50μm) traps suspended proteins and fine starches while allowing the clear, sugar-rich wort to pass through. This natural filtration process preserves the full spectrum of desirable nutrients and flavors and achieves exceptional wort clarity (≤5 EBC).
Every drop of sugar matters. Our design ensures you get the most from your malt.
Efficient Sparging: During the final filtration stage, a rotating spray assembly gently showers the grain bed with 75-78°C hot water. The uniform spray pattern ensures even contact, efficiently washing every last extractable sugar from the spent grain, targeting a residual sugar content of ≤0.5%.
Precise Flow Control: The lauter rate is fully controllable via the wort outlet valve and VFD pump, allowing brewers to target the optimal flow rate (typically 1.5-2.5 m³/(m²·h)). This control is crucial for balancing speed with clarity.
Adaptable to Any Grist: Whether you're brewing a traditional all-malt lager or a modern ale with fine-particle adjuncts, the system adapts. By adjusting the rake speed and bed depth, brewers can maintain optimal filtration performance for any recipe.
A clean brewhouse is a quality brewhouse. The lauter tun is designed for effortless sanitation and safe operation.
Sanitary by Design: All internal surfaces are polished to a smooth finish (Ra ≤ 0.8μm) with no dead corners. The rake system maintains a minimal clearance (≤5mm) from the floor and walls, preventing residue buildup. The filter plates are often modular and removable for deep cleaning.
Full CIP Integration: The lauter tun seamlessly integrates with your facility's Clean-In-Place (CIP) system. A 360° rotating spray ball provides complete coverage for a fully automated cleaning cycle, ensuring microbial stability and enhancing worker safety.
Process Visibility: High-borosilicate sight glasses allow visual monitoring. For advanced control, the system can be equipped with level sensors and in-line turbidity meters for real-time process monitoring.
