2000L Turnkey Brewhouse Arrives in France — From Concept to First Brew

Author: Henry Chen     Publish Time: 2025-10-22      Origin: CASSMAN

A new chapter in French craft brewing has begun: Cassman’s 2000L turnkey brewhouse has arrived on-site in the Grand Est region of northeastern France and cleared inbound inspection. Designed in close collaboration with the client, the system blends European brewing precision with modern energy efficiency, delivering consistent wort quality, flexible fermentation control, and a streamlined path from grain to glass.

The brewery is located in a repurposed industrial space near the border of Alsace and Lorraine—areas long known for their artisanal food and beverage traditions. The site was retrofitted specifically for craft production, with room to grow as demand increases across regional markets.

Project Scope: A Fully Integrated Brewing Ecosystem

This turnkey package includes everything needed to launch production—engineered as one cohesive system:

  • 2000L Brewhouse: Sanitary SUS304 construction, optimized lauter tun geometry, and integrated heat recovery to pre-heat brewing water using wort heat.

  • Fermentation & Brite Tanks: Jacketed vessels sized for multi-batch days, supporting both lager and ale production with independent temperature zones.

  • Utilities Package: Includes a glycol chiller, CIP station, sanitary pumps, manifolds, instrumentation, and safety relief valves.

  • Automation: PLC/HMI control system managing mash temperature ramps, boil intensity, transfer flows, and fermentation setpoints—all from a single interface.

  • Compliance: Fully CE-certified electricals and EU-standard tri-clamp fittings with pressure ratings aligned with local regulations.

Why This Configuration? Built for Real-World Brewing

The client—a rising French craft brand—needed more than just capacity. They needed reliability, repeatability, and room to grow:

  • Consistency on complex recipes: Tight temperature control during mashing and highly repeatable lautering ensure stable extract yields—even on high-gravity or heavily hopped batches.

  • Energy-smart operation: Heat exchanger recovery and high-density insulation reduce steam demand during boil and lower glycol load during cooling.

  • Fast changeovers, fewer downtime risks: Fully CIP-ready piping, orbital welds, and hygienic valve layouts minimize cleaning time between batches.

  • Designed for expansion: The cellar layout includes spare I/O points, pre-routed manifolds, and space for future fermenters—supporting a “cellar-first” growth strategy.

Delivery & Commissioning: On Track for First Brew

  • Equipment arrived at the site in Grand Est and passed initial inspection. Customs clearance and inland transport were completed without delay—a testament to clear documentation and prior coordination with local logistics partners.

  • Installation phase underway: Vessel positioning, utility hook-ups (steam, glycol, water, power), and I/O verification are scheduled this week. Piping tie-ins and pressure/leak tests will follow.

  • Commissioning plan: Cassman engineers will support cold/hot water runs, wort simulation trials, and first-brew supervision—available remotely or on-site based on client preference.

  • Full documentation delivered: Includes P&IDs, electrical schematics, standard operating procedures (SOPs), and preventive maintenance schedules.

Expected Outcomes

  • Higher brewhouse efficiency with stable extract yields (>80%) across recipe types

  • Faster, more uniform crash cooling thanks to multi-zone tank jackets—improving clarity and yeast health

  • Stable CO₂ and low dissolved oxygen (DO) at packaging, ensuring sensory consistency

  • Lower operating costs through energy recovery, reduced water use, and efficient CIP cycles

Client Impact: Scaling Without Sacrificing Character

The team is preparing to launch a core range of French-inspired ales and lagers, with seasonal rotations throughout the year. With this 2000L turnkey system, they now have the throughput to serve cafés, bottle shops, and small distributors across northeastern France—while protecting the recipe integrity, aroma profile, and mouthfeel that define their brand.

“We didn’t just buy equipment—we invested in a brewing partner,” said the founder. “Cassman understood our need for precision, cleanliness, and future flexibility. This system lets us brew like a small batch, at scale.”
